Gingerbread Cake Balls

“This tastes like Christmas in my mouth!”


What better review could there be?

That’s what one of my layout editors shouted with a mouth full of cake ball last week. And it’s true — these ARE the perfect treat for the holiday season. Spicy and sweet, perfectly tender with a crunch of vanilla chocolate. The perfect treat to bring to any holiday potluck!

Gingerbread Cake Balls

Makes 2 dozen

1 box gingerbread cake mix

1 1/4 cup lukewarm water

1 egg

1 cup cream cheese frosting

16 oz. white vanilla chocolate melts

Sprinkles, for decorating

Preheat oven to 350 degrees. Sift cake mix into a medium bowl. Add water and egg, and whisk for 2 minutes. Pour into a 9-inch square baking pan and bake for 25-30 minutes or until toothpick comes out clean.

Let cake partially cool for 10-15 minutes. Scoop cake out of pan and into large bowl. Mix in frosting with a wooden spoon or with your fingers. Add more frosting if mixture doesn’t come together. Using hands, roll mixture into ping-pong-sized balls and place on a baking sheet. Place in refrigerator for at least 30 minutes.

Melt chocolate in microwave. Using two forks, dip chilled cake balls into chocolate and let excess drip back. Place on a parchment-lined baking sheet and immediately top with sprinkles before chocolate hardens.
