Summer Berry Quinoa Fruit Salad with Honey-Lime Vinaigrette

Fruit. Yum yum yum yum. I’m not sure what I’m going to eat when fall comes around, and the fruits just aren’t as great. Sad times.

But until then, I’ll eat fruit every damn meal of the DAY if I please. Which I do, please.

This simple, light side (or lunch) is super easy to put together. Add any fruits you want — I used blueberries, strawberries and raspberries for mine, but mango is fantastic as well.

Summer Berry Quinoa Fruit Salad with Honey-Lime Vinaigrette

Serves 2

1/2 cup uncooked quinoa

2 cups fruit of your choice

1 tbsp lime juice

1/2 tbsp honey

 

Put quinoa in small saucepan with 1 cup water (or 1 1/2 cups, if you like your quinoa very soft and fluffy. I like mine a bit chewy.) Bring to a boil, then reduce heat and cook quinoa for about 6-8 minutes or until water is almost entirely gone. Let sit for 5 minutes.

Whisk together lime juice and honey in a small bowl. If honey won’t dissolve, pop the bowl in the microwave for 10 seconds.

Fluff quinoa with a fork and toss fruit and quinoa in a large bowl. Drizzle vinaigrette on top.
